WIAW: Work Day Eats Round 2

Since last week’s WIAW post of my typical weekday eats seemed to resonate with so many, I decided to share another this week as well!  I think sometimes it’s easy to imagine bloggers having perfect lives, perfect eats, and perfect days since the majority of posts shared on social media seem to revolve around all things blissful.  Complete flawlessness in any state is simply not true though!  Such as I mentioned yesterday, a perfectionist spirit is ingrained in me so I think stepping outside my comfort zone and sharing my everyday reality, even if that means my pictures are slightly less than perfect, is always good practice!

Yesterday I took time off from strenuous exercise and instead spent about 20 minutes stretching and relaxing with a light yoga practice.  One of my New Year’s goals is to move every day and although it wasn’t intense, it did get me up out of bed so that has to account for something!

I couldn’t decide between a savory or sweet breakfast so I had a little of both, one egg sandwiched between two slices of Ezekial bread, half of a honeycrisp apple, and a dollop of peanut butter.

I hit almost every nutrition basis in this meal with plenty of proteins, grains, fruit and healthy fats.

It was cold and snowy yesterday morning so I decided a cozy plaid button up and a warm knit scarf would be the way to go! (FYI – the plaid shirt is J. Crew and the scarf is Merchant 31!)

I arrived at work a little earlier to make up for my time out while filming Living Dayton on Monday.  I attended meetings in the morning, worked on spreadsheets, and then broke for lunch around noon.

I had the last of my stuffed peppers I made last week, along with Brussels sprouts and sweet potatoes cooked in balsamic and olive oil on the side.  I also made sure to have plenty of water and lemon green tea to finish the meal.  My snack at around 3 was another apple.  One of the best perks of my job is having fresh fruit available in the break room for employees.  It definitely provides healthier options and aids in keeping my hand out of the candy bin when I need a snack late afternoon!

Hot Chocolate Protein Shake

When I got home, I again had my usual after school work snack, which is typically a Dashing Dish protein shake.  Yesterday’s was the frozen hot chocolate version, only made my way with with a few chocolate chips and Nutella added into the mix too.  Sure, it probably defeats the purpose of having a protein shake, but doesn’t chocolate always seem to make everything taste like dessert?

The Perfect Veggie Burger

I have wanted to make the Oh She Glows ‘Perfect Veggie Burger’ for quite a while now and yesterday was the day!  I followed the directions to a tee only I used black eyed peas instead of black beans.  This recipe was delicious and I loved how the burger held it’s shape and didn’t crumble like so many homemade veggie burgers can.  I topped mine with grilled onions and put the whole thing on a whole wheat bun from Trader Joe’s.

Even Tim ate a veggie burger!  He said it wasn’t a Five Guys burger of course, but if I can get my hamburger-loving husband to finish an entire veggie burger, you know it must be doing something right!  I served our burgers along with baked homemade fries and I also topped mine with a slice of gouda cheese, while Tim chose a little Trader Joe’s parmesan-ranch dressing.  For my second time making veggie burgers, (the first time was not pretty!!) I was a little nervous, but the recipe was actually a lot easier than I thought.  It was a little time consuming to put together, but well worth it in my opinion.  Plus, I have plenty of leftovers that I will keep in my freezer for future quick lunches or easy leftover dinners.

The rest of the evening was spent blogging, cuddling with Teb, and watching Pretty Little Liars.

  • What is your favorite veggie burger recipe?  Have you ever made one at home?  Or, what is your favorite restaurant for ordering a veggie burger?  (My absolute favorite is from J. Alexander’s!  It’s so delicious, and I am guessing not the healthiest in terms of most veggie burgers!)
  • When perusing blogs and other social media platforms, which posts seem to catch your attention the most: those more flawless or those revealing imperfections?
  • Does your place of employment have healthy benefits for its employees, like the fresh fruit perk at my company?

  2. I am so happy other people can’t decide between sweet and savory breakfasts too! I am now always trying to have eggs with a little side of sweet (usually a banana). I know what you mean about being a perfectionist, but sometimes we just gotta roll with it 🙂 (and they still look great to me!)

  3. Love hummus! We use chickpeas and lots of garlic 🙂 Your tv segment was adorable, as always! And oh my word, that veggie burger looks amazing!! My company doesn’t have any of those perks, but I’m sure if it was much bigger it might!

      I agree! The more garlic the better, but I have to reduce the amount for my husband sometimes! It can get a little much for him lol! 🙂

  6. Oh yum! That all looks great! I’ve still never made my own veggie burgers, before, but it’s still on my list of things to try out! My company is awful – ha – the only good thing about working at it is the fact that I get a paycheck. But I’m hoping to change it post-baby. 😀

      If you have never made a veggie burger before, this one is great to start with because it tastes amazing and although it was a bit of prep work, it was also 100% worth the time!

  7. Where do you buy your Ezekiel bread? I’ve been wanting to try it, but it’s kind of pricey everywhere I see it!

    You look SO beautiful in that photo! Love your outfit and your hair looks so pretty.

    I just made Daily Garnish’s Veggie Burger a couple nights ago, and it was a hit! It was super easy too, so I was a fan. 😉

      I actually just buy my Ezekial at Kroger or Trader Joe’s. It is a little pricey, about $3.50, but it lasts me at least two weeks so I justify that the price is worth it! 🙂

  10. I love the savory and sweet mix!!! Eggs with cinnamon is the best — 😀 Gotta love those indecisive taste buds. Oh and I hear you about working on the perfectionism thing… It can be AMAZING but it can also be our downfalls!!! I am glad you are trying to work on it. After all, no one is really perfect and that’s what make us all unique! 🙂

      I 100% agree! Perfectionism can be both a positive and a negative if taken too far. We are all works in progress that’s for sure, but at least we recognize that relaxation is needed! 🙂
